Care service managers are ultimately responsible for the food hygiene standards within their organisations. Care home managers must:

  • ensure that they have written operational policies which include areas such as:

    • the preparation, cooking and cooling of food

    • washing-up procedures

    • the handling of food waste

    • health screening of food handlers prior to appointment

    • infection control procedures for food handlers

    • transport, delivery, storage and serving of food

    • training requirements for food handlers

    • adequate maintenance of building fabric (ie the kitchens and food stores) and catering equipment
